I didn’t try corned beef until I was in college and didn’t like it all that much. Maybe it was my cooking? I don’t think it’s eaten in the southern or western parts of the country as much as in the north-east. Southerns are big on cabbage though. My favorites are candied and pickled cabbage.

I didn’t find out, until I was grown, that some of these dishes came from Asia. Here we were thinking it was very Irish.! I love St. Patrick’s Day. Spring is definitely my favorite time of year and this holiday kicks it off perfectly.

My favourite dinner as a kid! My brother & sister didn’t like it so I got lots! It’s been a long time since I had that, probably since before my kids were born. It’s on my list for dinner next week.

The only time i had corned beef was from a can and on a sandwich. Yours look way better LOL. Your hubby must be jumping with joy. :)
