I didn't try corned beef until I was in college and didn't like it all that much.  Maybe it was my cooking?  I don't think it's eaten in the southern or western parts of the country as much as in the north-east. Southerns are big on cabbage though.  My favorites are candied and pickled cabbage.  

I didn't find out, until I was grown, that some of these dishes came from Asia.  Here we were thinking it was very Irish.!  I love St. Patrick's Day.  Spring is definitely my favorite time of year and this holiday kicks it off perfectly.</description>
