Turkey Day Prep

    **Edited to add pictures: I have so much leftover stuffing, I am trying a slew of things in the kitchen just to use it up.**

    So here’s one thing I wanted to share. With all the thanksgiving leftovers, here’s something I found that’s a keeper. I made this yesterday:

    Stuffing Frittata in my pan

    A single slice

    Stuffing Frittata
    (recipe based on Stuffing Frittata by Robin Miller, (c) 2006 Food Network)

    Ingredients:
    Cooking spray
    2-3 cups leftover stuffing (I use leftovers from this stuffing recipe, it makes it taste FANTASTIC)
    1 cup shredded Cheddar
    6 large eggs
    2 large egg whites
    3/4 cup milk
    1/2 tsp. mustard powder
    1/4 tsp. ground nutmeg
    2 Tbsp. grated Parmesan
    Salt and pepper to taste
    1 Tbsp. chopped fresh parsley leaves

    Preheat broiler.
    Coat an ovenproof nonstick skillet with cooking spray and place over medium heat. Put stuffing in the bottom of the pan to warm and stir to break up a little. Sprinkle cheddar cheese on top.

    In a medium bowl, whisk together eggs, egg whites, milk, mustard powder, and nutmeg. Pour mixure over stuffing/cheese to cover stuffing. Add parsley, and salt and pepper (turns out I didn’t need any salt, just pepper). Sprinkle Parmesan over the top. Cook on stovetop for 5-7 minutes. Transfer to the broiler and broil for about 2 minutes, or until egg is cooked through and cheese is golden and bubbly (it took me about 5 minutes or so instead of the usual 2).

    Serve with sliced tomatoes. Or a nice salad. Or thanksgiving leftovers (I had ham and asparagus). =) A great after thanksgiving brunch idea!

    Christmas is coming awfully early, the stores are already prepped for it a month ago. I’ve already thought up of Christmas gifts. Last year I did homemade cookie mixes and soup mixes in a jar. This year, I think I’m going to do something culinary too, but put in a bit of paper crafts and beading crafts into the mix. (Hey, this year I’ve been dabbling in a little bit of everything, so why not express it through my Christmas gifts?) =) I’ll post about that when the time comes. In the meantime, have a happy turkey day and a thankful holiday! =)

    Those sound like great Christmas gift ideas. I have a mean urge to make homemade marshmallows after reading a recipe in the latest issue of ReadyMade magazine.

    Sounds good. I’m hungry already. :)
